Peas Falafel Wrap w/ Lime Hummus

Wrapping up this week with Peas Falafel with Lime Hummus. This is the perfect dish for hot summer days. Super easy to make and really tasty! 

Falafel, serves 4:
1 onion
2 cm ginger
1/2 red chili
1 stalk of lemongrass
1 tbsp coconut oil
2 tsp roasted sesame oil
1/2 tbsp apple cider vinegar
1/2 tbsp tamari soy sauce
1,8 cups (4 dl) frozen green peas
1/2 cup (1 dl) chickpeas
1 pot thai basilica
1/4 cup (1/2 dl) rice flour or sorghum
Zest from 1/2 lime
Salt and pepper

Method
Preheat the oven to 180°C. Peel and chop the onion and ginger. Remove the cores and chop the chili. Knock on the thick part of the lemongrass with the end of the knife. Remove the outermost leaf and chop finely. Add the oil into the pan together with onion, ginger, chili and lemongrass and fry for a couple of minutes. Then add apple cider vinegar, tamari soy sauce, peas and chickpeas and fry 5 minutes, stirring regularly. Let it cool for a while. 

Chop the basilica and mix it together with the bean mix, flour and lime zest in a processor. There should still be some texture left. Scrape out the mixture and use clean, wet hands to quickly divide and shape it into small balls. Glaze the falafel with oil and bake for 20 minutes. 

Lime hummus
1 1/4 cup (3 dl) chickpeas
2 tbsp tahini
Zest and juice from 1/2 lime
1 tsp coriander
1 garlic clove
1 tsk herbal salt
1 tsp green tabasco
1/4 cup (1/2 dl) water
2 tbsp olive oil
Salt and pepper

Method
Mix all ingredients until smooth. Serve in a salad leave with fresh coriander, mint, pickled cucumbers, radishes, avocado and sprouts. Sooooo good!
