Chocolate chip cookies w/ white beans
On the weekends we think it's nice to have something sweet for the afternoon coffee. So, we have experimented to find a vegan variant of chocolate chip cookies. These cookies are everything you want in a cookie - soft and melt-in-your-mounth delicious!
Ingredients (10 cookies)
240 g cooked white beans
1 tbsp cashew butter, almond butter or peanut butter
1/3 cup (0,8 dl) cocos- or cane sugar
1 tsp bakingsoda
0,5 tsp bicarbonate
3/4 cup (1,8 dl) oatflakes
0,5 cup (1,2 dl) whole wheat or spelled flour
50-70 g dark chocolate or cacao nibs
A pinch of salt
Heat the oven to 375ºF/180°C. Mix all ingredients except chocolate in a food processor. Chop the chocolate roughly and stir with the other ingredients. Make 10 round cookies and place them onto a baking sheet. Bake 20-25 minutes or until light brown. Leave the cookies on the baking sheet and cool before enjoying them.
