Curry Bombay Veggie Wrap

The best quick, easy and filling meatless recipe for all different occasions. We use lentils a lot, it's a great supplement for meat in all kinds of dishes, such as bolognese (see previous post), lasagna, taco, soup e.g. Lentils are also a great source of protein and are a cheap and tasty way to eat less meat. 

Serves 2 - 3

Ingredients
1 yellow onion
2 tbsp oil
2 tbsp curry
1 can (400 g) crushed tomatoes
0,5 cup (1 dl) red lentils
1¾ cup (4 dl) water
1 tbsp vegetable broth
0,5-1 tsp salt
Pinch of black pepper

Chop the onion and fry it with oil and all spices a couple of minutes. Add the rest of the ingredients and boil on low temperature for 15 minutes.

Wrap, 4:
1 cup (2,5 dl) buckwheat flour
1 tbsp psyllium husk
0,5 tbsp chia seeds
Pinch of salt
0,5 cup (1 dl) water
1,5 tbsp melted coconut oil

Mix the dry ingredients in a bowl. Add water and melted coconut oil and mix well until everything is combined. Divide into 4 equal pieces and roll into thin, round wraps on a floured surface. Fry in a hot pan until the wraps is golden brown on both sides. 

Topping:
0,5 cup (1 dl) raisins
0,5 cup (1 dl) salty peanuts
1 banana
1/3 cucumber
0,5 cup (1 dl) grated cocos

Chop the cucumber and the peanuts, and slice the banana. Put the lentils compote in a wrap and add the topping on top. Enjoy!
