Peanut Butter Granola
The breakfast will be extra yummie and luxurious with homemade granola. This is a good base recipe that you can adapt according to what you like or have at home. Great to sprinkle on top of smoothie bowls and is also an appreciated gift to give away to someone you like.
1 baking tray
1 cup (2 dl) oat flakes
0,5 cup (1 dl) sunflower
0,5 cup (1 dl) roughly chopped nuts, e.g. cashew, almond, walnuts
0,5 cup (1 dl) chopped dry fruit, e.g. dates, figs, raisins (we used mango)
1/4 cup (0,5 dl) pumpkin seeds
2 tbsp flaxseeds
1 tbsp cinnamon
1 tsp sea salt
2 tbsp coconut oil
2 tbsp peanut butter
2 tbsp honey (or sweetening of choice)
2 tbsp water
Pre-heat the oven to 180°C. Mix all dry ingredients in a bowl. Melt the coconut oil and mix with peanut butter, honey and water. Mix well with the dry ingredients. Spread out over a large tray with baking paper and bake in the oven for 12-15 minutes. Stirring every 5 minutes or so. Let it cool and store in a can with a lid.
For a nut-free granola: replace nuts with seeds and peanut butter with tahini.
