Chickpea pasta w/ lentil bolognese

"What do you eat when you come home late after work and need to make something quick?" This is a question we get pretty often and we always answer oatmeal, smoothie bowl or this delicious lentil bolognese :) 

A tasty lentil bolognese is a must-try recipe and this one is nutritious, filling, budget-friendly, super easy to make and perfect for the whole family. We often double the recipe and put in the freezer so the lunch/dinner is ready for another day. 

Serves 2

0,5 cup (1 dl) red lentils
1 small leek
1 tsp oil
1 can (400 g) crushed tomatoes
1 tsp salt
0,5 cup (1 dl) water
4 tbsp creamy oat fraiche, optional
Pinch of sambal oelek
1 tbsp vegetable broth
1 tbsp tomato puree
1 tsp balsamico
1 tsp thyme
Pepper

Method
Rinse the lentils well. Cut the leek in small pieces and fry in oil a couple of minutes. Add all other ingredients except oat fraiche into the pan and boil on low temperature for 15 minutes. Add the oat fraiche and more water if needed. Serve with gluten-free chickpea pasta and arugula.
