There is definitely an increased interest in gluten-free baking. Many people with wheat and gluten issues experience quite severe reactions after eating gluten. A gluten-free diet can have a variety of health benefits, such as improving cholesterol levels, promoting digestive health, and increasing energy levels.

Ingredients (8 pieces)

1.7 cup (4 dl) oats
1.7 cup (4 dl) oatmeal
1 tsp psyllium husk
1 tsp salt
2 tsp baking powder
0.2 cup (1/2 dl) sunflower
0.2 cup (1/2 dl) coconut oil
1 grated carrot
1 grated apple
1 no-egg (1 tbsp chia seeds mixed with 3 tbsp water, leave for about 30 minutes)
0.9 cup (2 1/4 dl) oat milk

Preheat oven to 220°C. Mix all the dry ingredients and tear down carrot and apple. Melt coconut oil and mix it together with remaining ingredients. Let it swell for 10-15 minutes. Make eight buns on a plate and bake in the oven for 15-20 minutes (until they get color). Let the scones cool for a while and eat them with vegan cream cheese and raspberry marmalade!

Raspberry marmalade

1/2 cup (1 dl) raspberry
2 tbsp agave syrup
1 tbsp chia seeds

Mix well and leave for about 30 minutes.
